Thank you, Dan. You are an angel.

I was shocked at how many spices & herbs went into it.

Once you start mixing, you get the golden colour.  Unfortunately I didn't have enough Paprika, so substituted 1.5 tbsp cayenne pepper.  This works well, but probably gives it that kick.  At this point I put the oven to 100*C (Fan assisted) then lowered to just below (Roughly 80*C) to keep the food hot once it was fried.

I went with the drumsticks first, the key is to make a good egg wash with a dip ability 😉  basically egg whites + milk so that the mix sticks to the chicken.   You marinade the chicken first, then dip in the egg wash, then back to your marinade mix and cover all over and then shake off any excess.

This is the result once all chicken drumsticks were cooked.  Pretty cool huh?

The recipe is a lot, so had enough to do some chicken tenders (2 breasts cut into half) then had some diced chicken in the fridge too, so made them more dicier to have Popcorn chicken.

Bit if Chicken Gravy, some salad and home-made chips.    Good fun and very very tasty!  I'd say it's as good as you'll get without an industrial strength pressure fryer, or Canola Oil/Soybean Oil.  Other than perfecting my egg wash (Maybe less milk) I think they would be top notch!

    Enjoy!

That sounds amazing, instead of the flour?  I might do a Chicken Burger in that.

    is it gluten free

I presume the only ingredient listed that's Gluten is the flour?  So sub for gluten free flour? Also check the spices & herbs before you make it.    🙂

I’d love to give this a go.  Did you use a deep fat fryer or shallow fry?

Deep fat fryer, however if you do 1 or 2 individual bits of chicken at a time. Maybe two cups of oil in a wok/fryer?  Then just check the temperatures are hot enough to cook the chicken.
